Ingredients
- rice miso 1 tbsp
- soup stock 800ml
- chicken thigh 1/2
- carrot 1/4
- flour 100g
- burdock 1/3
- long green onion 1/4
- Japanese white radish 1/5
- water 60ml
- sake 1 tsp
The name of this recipe, hittsumi soup, is derived from the process of blending flour with water and then using your hands to tear off pieces of the dough after rolling it out thinly.
Hittsumi comes from the verb “hittsumamu” a provisional expression for the act of pulling apart something by hand.
